Kept or released?

Just curious if the long nose was released or kept and eaten. In my experience the flesh of the larger versions of the long nose (700mm - 1000mm) is very coarse, with lots of sinew type material throughout the fillets. I now release these larger specimens and keep the smaller ones (still legal) for the plate.

Big ones are good fun but. Geez they pull hard, especially on eggbeaters.

It was pulled up from 60 metres of water, so if it's legal it's kept. Bigger fish tend to be drier when cooked as well. Choose your recipes wisely and don't overcook.

Sinew

The larger long nose fillets IMO have a lot of sinew throughout the flesh. I often use a thai green curry recipe and the sinew is even evident when cooked in this fashion. How did you cook the longnose Rohan?

Sinew - Chinaman

I found that my Chinaman had a bit of sinew in it as well. The flesh was really firm and didn't flake much once cooked, but still tasted ok. Probably would have been good in a green curry now that you bring it up.

i do enjoy it in a curry as well. Had some during the week beer battered and it came up a treat.
