Crovacing

 Just chasing your thoughts on crovacing. When you buy something from the shop ie ham, scotch fillet steak, or a roast that has been crovac. The shelf life in the fridge generally is around a month. If I go catch a feed of fish, or buy some steak or what ever from a butcher and crovac it does this extended the shelf life without having to freeze the food?

I cant remember where I read an article, but I believe fish contain a bacteria that can thrive in low oxygen conditions and I believe you shouldn't cryovac unless freezing. Even after freezing, I believe you should thaw with the bag opened to prevent this happening.

 Cheers Eric. i didnt know that about thawing out the fish. i have never opened a bag whilst thawing that i can remember. in fact i think ive done everything they said that you shouldnt. Meat cant be the same as there are no warnings on their packaging.

 Usually when i crowvac anything i trim them a bit with old Mr 12 gauge....

I think the professionally cryovacced stuff is treated?

 Stuff like ham is cured, so that'll keep for weeks on the fridge anyway. I think that cryovacced steak and stuff you get that doesn't require freezing for a while is irradiated? or UV treated?  could be wrong? to kill off the bacteria and extend shelf life at fridge temps. I tried keeping thawed mulies , cryovacced,  once, on ice, they just went to mush anyway. Great way of extending the life of frozen food. 

we usually thaw the cryovacced fish while it is still sealed, but always eat it that night.

as ranmar does i thaw in the bag usually in water so not sitting out too long then eat that night. 

when i fillet i dont wash fillets in any way and wash just before i cook it , tastes so much better as the flesh hasnt been tainted and still got all its natural juices in the flesh.
