Yes, with the exception of the head, you lose most of it because its more like fin material. When its done it should look much like any other shark thats been cleaned.

Yer you can feel where the head ends and where the meat starts. Its just in frount of the 2 side fins as you said. I take the head off on the beach usually coz it weighs a tonne. lol.
