Hi all
I have been using a swibo yellow handled 30cm total length flexible knife.
Blade getting chipped now... it might he 15 years old and I am a lazy sharpener... so time to replace.
Suggestions , size and style for filleting demersals (if the government let me catch one again)?

Had many Swibo's
And still have the old yellow handle Swibo now demoted to bait board duties filleting and cubing, still holds a good edge.
Filleting duties are shared between a couple of Victorinox's, Dexters and F Dicks, all very good knives that I sharpen with a couple of stones, a steel and strop.
Might give a ceramic stone a go, what systems are you blokes using ?

Swibo
swibo curved blade for me, although these, and f dick are very similar.
I use a Chef's choice electric sharpener because I'm lazy and have minimal skills!!! Finish off with a strop and works nicely.

I have Swibo's and they are ok, but in my collection a Dexter Russell which is superb. Takes a bit of sharpening but keeps an edge.
