Greenlip Abalone and Tuna Salad

From a recent Albany trip.
The greenlip steak was 225g and so delicate you could cut it with a butterknife. The seared fish is Southern Bluefin Tuna in Salad Niçoiseish.

The pic is a little
The pic is a little misleading, you can see browning, but they got 40min in the pressure cooker with Blue Eye Trevalla stock and were finished in a skillet for a little colour. The stock was later reduced to make the sauce.

Pressure cooker
Hey Jamie, looks bloody nice! I don't have a pressure cooker but have a fair bit of home made fish stock - how long do you reckon I should poach a greenlip for if done on the stove?
