Try steaming
Try steaming leatheries........ they come up with a "cray like" texture and taste bloody good

Its just a knack to skin them
Once you take off the head you can usually slide your fingers under the skin, you simply pull it back towards the tail and a perfectly clean skiinned frame is left. I rekon they are best cooked on the bone though.
The heads make good crab bait as well, so nothing goes to waste.
