We cut and crack the spine at the back of the head, then the tail second. Big buggers also get a throat slit for good measure. This is how I was shown as a lad back in South Australia. We never have issues with smelly ammonia in the fillets, seems to work. Some people cut the fins off, but I don't think this improves the table quality, only makes for a crappy photo!

ever tried stiking a hose fm the tail section after its bled and flushing the ammonia out. got shown it by a shark fisho fm down south. suppose to clean all the ammonia out strait away.
Yeah, me mate was sayin his youg fella thought is was great to use a shark as a super soaker, even put his head under the water sreaming of the noah spine! -Uhhgg, if only he knew whar was coming out.
