Crayfish a l'Amouricaine

One of my pals dropped in this bottle of Basque wine and said it had been selected especially to go with crayfish, as she knew I'd been onto a few. I knew then I'd have to try a bit harder than usual, so I found the recipe on the SBS website: Crayfish a l'Amoricaine.
I had to fiddle with it a little, I wasn't very happy about cooking crayfish, then taking it off the heat, to reheat for serving, so I got around that by stripping the meat out of the crayfish, and prepping the sauce with the cooked head and shell. The sauce didn't really have the good grace to show up in the pic after all that hard work, but its there in the rice and you can taste it so "topa Helen!" (cheers in Euskara)

Crayfish cooking
Your experiment looks very inviting, Till, where can I down load the recipe and what was the wine, was the wine and the fare as good as it sounds and looks?
We get our share of crays here in Kalbarri so we are always looking for interesting ways to prepare, cook and present them, you appear to be the resident FW seafood cooking expert; keep up the good work!

You are a cooking legend Jamie, you also have an uncanny knack of posting these pics when I need to try and cook something for myself. BTW, thanks for the cray the other day, although not prepared to your standards, still came up bloody great!! Much appreciated.
