Dexter russell, Any shops have them?

Hi Guys
I am looking at getting a better filleting knife and like the look/reputation of Dexter Russell.
I cant seem to find any knife shops that stock them so I can take a look.

I have already seen that website but the shop is in NSW and the knife I want is out of stock. I was hoping a shop in perth might stock them so I could go have a look

Farmer supplies shop Neerabup
I was at a farmer supply shop in neerabup about 6 months ago. Think its called Micro Bros. Saw they stocked some. Might be worth a call.

The 8 inch Fillet looks to be the same as mine. Sorry I am not a bit clearer on it but have had it for years and held up well. Good knife for fish of all sizes.

they've always had a good range of knives when I've been there.
Does it particularly have to be DR or would you consider say a Swibo or Frost or Buck?
I have these 2 knives, and they cover pretty much everything I catch!

Thats the sort of shop I was looking for, Mirco's have a few but essentially they are a tractor shop. I was looking for something that had a bit more of a range and expertise.
Huggy that swibo skinning knife looks to be prety handy.
Yes Spicey they have a good rep and my little martini has had a very hard life (15yrs) plus it makes filleting a big fish pretty hard work. the 8inch wide looks up to the task
anyone got any reccomendations for sharpening the dexters. I was thinking chefmate and a good steel, I only have an accusharp at the moment

Oil stone
Way back there was a few articles on here about sharpening good knives, worth a look at.
I only use an oil stone and steel for sharpening mine and with a little bit of practice you should be able to pick it up reasonably quickly.[But originally being a solo slaughterman it comes easy]

A lot of people recommend the Chefmate
I don't have one so I can't comment. I certainly wouldn't let an Accusharp near a good quality knife. I use and recommend a Warthog sharpener. It's idiot proof and does a good job on all my kitchen and fishing knives.

Ditto to not letting a chefmate near a good knife. I've used one on my tramontina filleting knife ($15, but the same sandvik ss as many other knives) and a few of the less-often used wustofs around the house, and it takes a bit of meat off to get going.
Lansky is another hand sharpener that gets a good rap.

I bought a jewel stick for my
I bought a jewel stick for my father in law a few years back. Its one of those diamond crusted steels but the flatter one, thete are a few different types out there but the Jewel Stick was from the US and a little better than the rest. That works pretty well in between putting an edge back on it everynow and again.

Your comment about the Chefmate
comes as no surprise. Having never used one I didn't want bag it but suspected they would be a bit brutal. When I purchased a set of Wusthofs years ago from the Cut It Out Knife Shop the Warthog sharpener was their number one choice. I use an Accusharp the sharpen my spade.

Yeah the accusharp is a bit ordinary, fine for a bait knife or something that is gonna get a bit abused, I will look in to one of these warthogs

Chef choice dont remove that much metal...I have seriously ran my bait knife through the number 1 stage atleast 10 times in the last year as i do stupid stuff with it and it hasn't worn down that much...For knives you look after and keep sharp you might only be running through it every 3-6 months not going to effect the life of them that much IMHO.Just remember to use a good steel to realign the edge, you should only need to use the chefs choice when the edge is rooted.Can't beat getting a razor sharp knife in under 20 secs aswell!As for those dexter russells there very cheap for the states so i might need to order some!

I have the Warthog V-Sharp
As I recall I paid around the $140 mark. May be a little more now.
