 To get  better tasting shark you need to cut the head and tail off to let the blood drain properly and gut asap removing the brown blood line from down the spine. Not esential to cut the fins off until you fillet.

We always freeze our shark first before eating that way when thawed out any remaining amonia will go with it . Dont get me wrong they do taste good fresh but better after freezing. We have caught and eaten plenty of sharks and found on all types its better

 Thanks ill definatly try that next time, these tasted very nice but did still have that amonia aftertaste! 

I cut the blood line near the tail and throat then bled out in the ocean. Must admit i didnt gut them until several hours later.

Do i fillet and skin them before freezing or just place the trunks in the freezer and fillet when defrosted?

 fillet and skin . that way you can portion it up to the size you want. one thing i have found with all fish is dont wash off the fillets before freezing. wipe off blood and other stuff . we wash off ours just before cooking that way water will not remove any of the natural oils in the flesh and water weather it be tap or salt it will alter the taste. i have tried both salt and fresh water but found not washing better. if possible vac pac which will stop any freezer ice build up

 Great catch off the beach well done. I just bleed them in a bucket of seawater with the head down tail up for 10-15mins then cut head off and gut them. I also usually cut all fin and tail off and then put on ice. Occasionally I haven't cut all the fins off and didn't notice much different in taste. The main part is the bleeding, head off and gutting. I virtually never get any ammonia smell from Gummy Sharks after this.
