BBQ Hapuka wings and belly

Can't believe I used to throw this stuff away years back, best meat on the fish once again.
I just scraped the slime off, then gave it a rub all over with a cut lemon, then it was split, pinned flat with a skewer, fried a little on the inside, but then really given it on the scale side.
It came out BBQed to perfection. Andrea got the belly because she is bone-phobic, Otto got the bones out and chew the meat off, I got the rest!
I was going to take a pic with the salads it was served with, but really who cares, this is the tasty bit!

I did the same thing Jamie, altho mine didn't look quite as good , As you said i normaly don't bother with them either, certainly changed my mind now.

truism
famous old saying 'the sweetest meat is next to the bone'. Cut the flesh out of the cheeks for a real treat. I was interested to know how the flesh of a fish that big tasted - obviously very good. Thought it might be a bit coarse.

Actually these were pretty small puka, but big as fas as average catch goes.
The flesh is fine, even the 32kg BG was really good, although I heard the recent 46kg one was a bit dry.
We cut the cheeks from the 32kg BG awhile back, although I didn;t get to eat that bit =)
