UK/Portugal fishing

Hi all
Heading to the UK and Portugal with my wife in October and as always, keen to fish somewhere different. Anyone have any suggestions of places or styles to look into? I'm thinking fly fishing for trout but open to other ideas too. We don't have any hard plans yet of where we're going so can be flexible to a degree.

Douro for Wells Catfish
Nearly all fishing in freshwater in the UK is club reserved. Can get charters in the English Channel to sea fish. Other than that it is carp carp carp

Scotland
Plenty options in Scotland for fly fishing for salmon and trout on the lochs and rivers. Would need to check on permits etc. There are also some charters if you want to catch mackeral, cod and ling or even big skate, for example: https://www.morayfirthfishingcharters.co.uk/

Thinking of getting up to
Thinking of getting up to Scotland but I think time might be our enemy there. Most of what we want to do this time is in the soutern and easter parts of the UK.

To be honest I'm not sure really. My wife has been planning where she, I mean we, want to go! We're doing some more planning this week so I'll know better then.

Wow Dave, I'm in Portugal
Wow Dave, I'm in Portugal (Lisborn and Porto) Mid September . Very keen to try out the flat grilled fish they do over there and the incredible tinned fish industry. There's a restaurant in Lisborn called Can the Can that serves up tinned fish etc gourmet style, very keen to give it a go.
We then head to Madrid for a week, London 3 nights, Eurostar to Paris and the Train to Epernay for 4 days to drown myself in champagne :P
We'll do the direct flight back to Perth from Paris

We'll definitely be in Lisbon for a couple of days so I'll give that restaurant a try. I've heard of the concept but didn't realise it was there.
We were booked on the direct flight in and out of london but it looks like it'll only be on the way home. Funny Qantas has canned the direct flight from Perth but we've heard nothing from them so far. Probably will closer to the date.

from what i remember, any
from what i remember, any sort of fly fishng in the chalk streams requires permits or a guide andis pretty crazy exensive.
there are a few privately stocked areas where you can pay an entry fee and fish for the day, usually beautiful grounds etc, and some have sections of the streams running through. cant remember the name of the one i fished in, but was an awesome day, and learned heaps. and wasnt anywhere near as expesnive as hiring a guide in the streams for a day.
everything over there needs a permit lol! we get a bit spoilt here in aus i think. :)
