The smaller ones are better
The smaller ones are pretty good. Not as good as rainbow trout, but still very good for the table.
The larger ones tend to be a little more "greasy". They eat a lot of smelt and herring and the bigger the fish, the more fishy and oily they become but the meat starts to get more fibrous with age.

lake simcoe!
I worked putting docks, boat carriages and tracks all around lake simcoe from April to July last year. How did you go in the storm last week?
