How to keep fish fresh.

Hey guys,

Am heading out to Kalbarri on Monday and heading out on the boat on Tues with Laurie. Was wondering how we should keep our fish that we caught fresh so the trip back to Perth on Wed. I've been told that keeping a gutted/bled fish in a slushie of ice and water kills the meat and that freezing absolutely destroys the fish ( metaphorically speaking). Anyone could help in the matter?

Some fish freeze better than others, I'd never freeze pinky for example.

 

Best to use a slurry to get the fish cool fast, but once its cold, keep it on ice, it should keep like that for a couple of days fine.

 

I think its probably best to only fillet the fish as late as possible and avoid cutting the guts when cleaning.

We fillet all fish

we catch mainly dhuie, snapper, baldie, black a^%$e, whiting, crayfish.  Fillet wash well, pat dry, bag in freezer bags (before we bought vac seal machine) and freeze.  When we got vac sealer, fillet (pat dry) vac seal, mark what fish it is and freeze.  Come home 2litre frozen bottle of water, pack esky well with all frozen fish.  Home, still frozen,  straight into freezer till we want to eat a fillet.  Am thinking of buying a big ingal, as new 4x4 has socket for ingle to plug in (no cigerette lighter socket anymore or ashtry bugger)  in and while driving (only) 4x4 runs.

 

Hate snapper on the bone, frozen, then eat, too strong.

Whack them straight in to an ice slurry as soon as you catch them and when you get back to shore chuck the old ice and slurry out and re pack them with a layer of ice, fish [with ice packed in guts cavity] then another layer of ice then fish and so on, topping off with a good layer of ice.. Drain the soup off regularly but and only open the ice box to add more ice. They should last for 4-6 days if its a top quality ice box and you use plenty of ice.

Spike your fish, bleed them and then put them in a ice slurry (not too much water) is fine for a few days. If that time frame is pushed out to 3-4days then spike, gill & gut and put in slurry as above.

i would do what carnavonite has said aswell as every1 else,but if you realy want to keep as fresh as possible,try filleting your fish and vaccuum seal ,and freeze that should double your fish fillets life span,hope this helps

It MUST be salt water, fresh water will turn your fish to shiit. When we fillet our fish, as soon as the fillet is removed, it goes straight into a stainless tub with salt water and ice.

You will see and taste the difference.

I would never put a fillet in water, be it fresh or salt. If you need to chill a fillet, bag it first then put it in a slurry.

as far as im concerned Oceanside have it spot on. if your only going for 2 days fishing and travel for 1 a good slurry with the whole fish in it will be ok as long as the fish have been treated right from the start. no need to gut. wetliners can keep fish on board for a week without gutting the fish and they are as good as when they were caught , well almost .
