hark food smokers

 bought my self a hark food smoker unfortunatly i have only used those small smokers you buy at a tackle shop , any advise on recipies , cook times and temps would be apreciated mainly going to do poultry , legs of  lamb and pork in it will use the  small smoker for the herring  any advise appreciated  , also was told never scrub it out does that sound true, i know i dont with my webber

 Have you done a search cobba, i cut up an old keg and made my own and used a few recipes from here.
